Note: Not light but I would drink this with a straw if I could. We did make it with low-fat buttermilk.
Yield 1 cup
1/3 cup honey
1/3 cup buttermilk
1/4 cup chopped fresh chives
2 tablespoons lemon juice
1/2 teaspoon pepper
Combine all ingredients in a small bowl, stirring well with a wire whisk.

Wow, I'm making this (and the chicken salad) tomorrow! I'll try any recipe with honey and I always have leftover buttermilk from making biscuits so this is perfect!
