We have been cooking I just haven't been a very good recipe poster. I have been sharing them at work because I have some easy ones perfect for busy weeknights.
Soft Shrimp Tacos with Tropical Salsa (I was dubious because it uses canned fruit but it came out great.)
Black-Eyed Peas and Rice with Andouille Sausage (I doubled this recipe and froze the other half for next week. I used kielbasa because I didn't have time to run to a specialty market for andouille.)
This one isn't fast but I made it for dinner Sunday and we had it again on Monday night since soccer practice makes it hard to cook.
Smoke's Chili (Good for using up beer. Not normally a problem but Jeff gets those variety packs and neither of us like the porter.)
