Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Memaversary

Stole this anniversary meme from Chatty. Our second anniversary is coming up in two weeks.

1. How long have you been married? Almost 2 years.

2. How many people came to your wedding reception? About 60 people to our post nuptial celebration.

3. What kind of cake did you serve? We had three wedding cakes: one chocolate raspberry, one triomphe w/walnut creme, one passion fruit creme. We also had a citron ganache one there for Jeff's birthday.

4. Where was your wedding? On the beach of a villa in St. Croix, US Virgin Islands. Our post nuptial party was two weeks later in Bedford, NH.

5. What did you serve for your meal? Way too much food!!

6. How many people were in your bridal party? None. Just the bride and groom. There were only six guests.

7. Are you still friends with them all? Sorta.

8. Did your spouse cry during the ceremony? I think he might have gotten misty but I was pretty emotional myself.

9. Most special moment of your wedding day? Saying the vows we wrote for each other and having the people I love most in the world there.

10. Any funny moments? See below.

11. Any big disasters? Small disaster when the place I was supposed to get my hair done was closed. No one there but me and some chickens pecking around the gate. Thankfully my wedding coordinator lived near the salon owner and went to her house and brought her to open up.

12. Where did you go on your honeymoon? The villa went rented for the ceremony and also two nights across the island at the most amazing all inclusive resort.

13. How long were you gone? Nine days.

14. If you were to do your wedding over, what would you change? Nothing. It would have been nice if more people could have made a vacation out of it and come but it was wonderful all the same.

15. What side of the bed do you sleep on? As you face the bed, the right side. Jeff gave up trying to get me to rotate but he totally sleeps on my side when I am away.

16. What size is your bed? Queen.

17. Greatest strength as a couple? Crazy in love and very much alike and both divorced.

18. Greatest challenge as a couple? My temper and a blended family and we are both divorced.

19. Who literally pays the bills? I do.

20. What is your song? Probably Dashboard Confessional "Hands Down" the lyrics of which are the inspiration for this site and design. It was kind of the theme of our first date and the whole album brings back great memories of falling in love.

21. What did you dance your first dance to? I can't remember because it was in the middle of a restaurant the night after we got married.

22. Describe your wedding dress: White eyelet with thin straps and came to right above my knee and had a white ribbon woven at the empire waist.

23. What kind of flowers did you have at your wedding? None really. We had some sand and seashells and local flowers on the table with a tiny cake and champagne.

24. Are your wedding bands engraved? Yes, we did it as a secret and then read them to each other on our wedding night.
