Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Flying Solo
I am so glad I decided to schedule one day off per week starting at 34 weeks.  Otherwise it would be so easy to talk myself out of it.  Today is my day off and I feel so much better.  Even though I will have to go by the office later it shouldn't be for long.  I need to check in on the grants and put in the paperwork to hire a new secretary.

Jeff took the kids to see his grandma in New York and they left yesterday.  Today they are on their way to upstate NY to stay with his mom until Sunday.  So because I had no reason to get home last night I worked late.  And then spent some quality evening time with the dog watching TV.  What mom wouldn't want all this time to themselves?  But the thing is my mothering instinct is on overdrive and I really miss my little boy.  And it's all well and good for me to leave them when I go business trips but I hate them leaving me!  But the kids love an adventure and Jeff really doesn't get to see his mom that much and I know they will have a great time.  I didn't go for numerous reasons.  I am 35 weeks and don't want to be that far away from my hospital with my midwives.  Also being in the car that long would be tough at this point.  And of course I can't be away from work right now.  I am sure I will find ways to fill my time and I have plans for the weekend and plenty of stuff to do here.
