Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

I Lost A Week In There
Ugh.  Where to start?  Work has been crazy.  I suspected it would be with two grants due within days of each other but this has been particularly challenging.  Last week I only put in 11 hours of overtime but it felt like more.  In between writing I had a conference to attend, a conference to present at, a nighttime board meeting and a public hearing.  I was only supposed to be listening at the hearing but I found myself testifying in front of the House Committee on Health & Human Services.  Whee!  So I was feeling pretty good Friday when I finished my grant and gave it to my boss for review.  Today I come back and even though she thought it was very well written she wants me to add some stuff.  Tons of stuff.  Tons of data I am supposed to research between now and Friday.  It is taking all of the fun out of this.  So that's what I will be doing this week.
This weekend we spent Saturday shopping for the new house.  We bought a bedroom set, a new bed for Isabelle and a sectional sofa (in red!).  If that wasn't enough pain in the checkbook we also bought a washer and a refrigerator.  You know you are lame when you are excited about a side by side stainless fridge and an energy efficient front load washer.  And we didn't even have any shopping bags to show for it.  At home we ordered new bedding and the feathertop bed that Jeff has been wanting since we slept on them on our kissiversary getaway last year.  I may not look 5 1/2 months pregnant but I sure felt it after all that time on my feet.  Sunday we bought lots of packing tape and I started packing Keegan and Isabelle's room.  Jeff started on the kitchen and pantry.  I would rather be in denial about how much we actually own and have to get boxed up.
I did find time today to book the moving company.  I am still looking for an interior painting company.  We are only painting the dining room (red like mine now), our bedroom (to match the new bedding) and the baby's room (green probably).  The rest of the house looks good and the kids will jazz up their rooms on their own.  And the half bath, well that will be a project we tackle later.  I swear it is painted to look like red/orange lizard skin.  How can someone who has taste I pretty much agree with do that to a bathroom?  And to tell the truth I am not crazy about the plaster look of the kitchen but I can live with it.  We will probably redo the kitchen next year so that it is  better setup for all of the cooking we do.
