Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Winkle
We had a nice time in Maine this weekend.  It was so cold that the ground on my parent's property was already frozen.  They have to shift the house over about 35 feet due to a rock shelf but it actually works out better that way.  We had a nice view of the lake and could see where they will cut in the walkway to get down to the water.  I think it will be interesting to visit at different stages of construction.  Does that make me weird?  I love floor plans and elevations and endless talk of construction materials.  And don't get me started on interior design.  Hey if I am going to be stuck in this house I might as well live vicariously.
Sunday morning after breakfast Phil, Jeff and Keegan went out four wheeling.  They saw a large bull moose that had already shed it's antlers.  Keegan was very excited.  My mom and I went out with them next.  She has never seen a moose.  She didn't see one that day either.  And yes it occurred to me halfway through the ride that four wheeling is probably not a good idea while pregnant.  So strike more fun off the list.  Looks like my winter craziness is confined to cross country skiing and snowshoeing.
We got home Sunday night.  And it really felt like we got a break from reality.  We need to plan more getaways.
