Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Liberty

Friday my meeting went to 5:30 and I still had a two hour drive home. Luck was with me because I got home in time to still tuck in Keegan in at the last minute. And I came home to a spotlessly clean house and dinner just coming out of the oven. Steamed carrots, roasted red potatoes and Diner Meat Loaf "Muffins" (which were a favorite from last November). We also got an offer on our house. Even though it was very low I at least countered since it is the only offer we have gotten in 14 months. We haven't heard back yet.
Saturday we did a drive by look at seven houses that are possibilities to buy. Doing the drive by was very helpful because the online pictures didn't show how close some of them are to their neighbors. We were able to cross a few off from consideration. Then we went by the theater to pick up tickets for an event in December and headed to my parents. It was a weirdly hot 82 degrees yesterday. Even though we had thought the season was over Keegan got another jet ski ride and we all had one last boat ride around the lake. Jeff went out in the kayak and my uncle Russ who is visiting from California took Keegan out in the canoe. We really were going to leave their house at a reasonable time. But there was fresh four berry pie and all of Russ' awesome pictures. He is marine biologist and therefore has great stories and pictures of the boat trips he does for work. Oh and he works with sharks. Very cool.
This morning I can hear Jeff downstairs making pancakes and I am supposed to be getting ready. I am packing for my trip to South Carolina. I leave today and return on Tuesday evening. This meeeting is casual dress so no need for heels. And the dinner Monday night said tropical shirts, shorts and flip flops. I think I'll skip the tropical shirt though. This should be my last business flight until January. I have a college girlfriends reunion trip in November to Nashville. Then I hope a fairly quiet winter at work and home.
