Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Some recipes from before vacation:
Chiles Rellenos Gratin (the filling of this was good but not sure if it was worth the work for the peppers. I am going to try it with layered totillas next time instead of the peppers.)

Ginger-Peanut Chicken-Salad Wraps (this was awesome for lunch today too)

Tonight:
Salmon with Maple Syrup and Toasted Almonds (repeat)
