Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

South Summit

Friday Keegan and I went down to the teen center where I used to work. I showed him around, we played some foosball and then went to get lunch. We went back for a while longer because some of my friends had just gotten there from a training. It is wonderful to see some of the things they have been talking about for years coming true. And I like going back and being welcomed like family. I will never forget how they came through for me when Tom died.
After our visit we went to hang out with Erika and Sammy. The boys played all over the house and outside. Then they ate dinner together and after work Jeff met us there and all the grownups had Vietnamese and Thai food.
The weekend was great. I believe in a Father's Weekend not just a day. I did the dishes, took the dogs out, did the garbage and Jeff picked the activities. I made breakfast both days and the second day we served it to Jeff in bed. Saturday afternoon we took the kids on a hike we had heard was good for the under five years old set. The kids loved climbing over rocks and crossing streams and finally getting to the top. I was so impressed with how well they did and really enjoyed it. After a snack and pictures we headed back down and then had a picnic dinner. Sunday was lazy in the morning and then we went down to my parents'. The kids played in the new sprinkler that shoots water and balls. They swam a bit and made their first s'mores and took a boat ride. Keegan's face was swollen on the side from a bug bite but it didn't slow him down. This morning he woke up with his right eye swollen shut. So I cancelled what would have been my first counseling appointment and put a call in to his doc. We decided to be safe rather than sorry and get it checked out. No infection just a bad reaction. So I missed work again. Poor Jeff had decided to work from home because he has a big project and wanted to avoid the interruptions at the office. So instead he got us. He managed to get quite a bit done with us out of the house at the doctor's and the store and then nap time. I read a book for part of the time and then prepped dinner. Which was a tremendous amount of work with dubious results that I will share later.
Tomorrow I leave for a conference for the next three days. My co-worker and I are hosting this one, so it is local. Even though I won't be home at least I will be close. Then absolutely no business travel until August.
Oh, I almost forgot. Jeff got his Father's Day present today. I had his car completely detailed. They even did the engine. The whole thing looks like new and he was delighted. It was totally worth the smile on his face when he got in.
