Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Coconut Flakes

All told we got about 12 inches in the last storm. And it was heavy and covered with ice. I've never had snow hurt to walk through before. The plows showed up and Jeff dug out the cars and I brushed them off and the kids played in the mountains left over. Saturday afternoon we went down to my parents and the kids went sledding and built snowmen and then we went for pizza. Sunday we didn't do much and I napped and Jeff took Keegan with him to drop off Isabelle so I could rest more. But of course as soon as they left I was wide awake. Luckily there are always things to do around the house. When they got back we headed to the store to stock up on groceries for this week's recipes. Jeff saw maraschino cherries prominently displayed out front and I was easily convinced to join him in his banana split craving.
Yesterday we met with our attorney to finalize the trust and wills. We have some homework to switch over beneficiaries to the name of the trust but otherwise we don't have to worry about anything else. After the two hour meeting I decided to take the rest of the day off. I wish I could say I was productive but I watched three weeks worth of Tivoed Lost episodes and folded laundry and ate tacos leftover from the night before. In the afternoon I went down to see Erika and Sammy before my evening presentation. My graduate program asked me to come and address their graduating students as part of a career panel. This is the second year I was asked and was happy to go back. It was such a great program so I want to support it in any way I can.
