Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Ketchup

I was off work yesterday and the kids' school was closed for teacher training and parent conferences. We went over to Erika and Sammy's to play. We had some fun indoors and took them all to the playground where Sammy gathered a crowd of children onto his quilt. Boy is that kid a chick magnet. No doubting his absolute cuteness. By some miracle all three kids took a nap at the same time. Erika and I got some girlie chat time in peace. Love those moments. Then we were off towards home for parent conferences. Keegan's evaluation went well. Best of all she said she couldn't see any negative impact of Tom's death showing in Keegan's behavior or mood. We had fajitas for dinner and sorbet (Keegan's new fav) for dessert. I was falling asleep watching a movie at 9 which explains why I am not a stay at home mom;)
This morning we started a new class with the kids. We had done gymnastics for a few sessons and felt it was time for some variety. This class is for pre-schoolers and introduces them to sports. Today we played floor hockey with these tiny foam sticks. They also do stretching and warmups. The best part is that parents must participate. We get some exercise instead of just watching them. At the end of the session we played a scrimmage and then we ended with a song. Next time I will be sure to wear a sports bra. We rewarded ourselves with some shopping and used some of our wedding gift certificates. Most importantly we got the food processor I have been eyeing. After the kids woke up from their naps I made oatmeal cookies with them to use up some things in the pantry. We stuffed them with craisins. For dinner we used the food processor to make Diner Meat Loaf Muffins. They were excellent and use carrots which is a great way to sneak in veggies. We served them with rice pilaf and fresh green beans. I will post the recipe but the cookinglight site is acting wonky right now. I think they will taste even better as leftovers.
And I am not counting my diaper life as over yet, but Keegan has been wearing underwear since last night. There was one minor incident this morning but he has been dry and asking to use the potty all of the other times. This seems to be working way better than earning stickers ever did. I am hoping he can carry this into school next week. I am actually bringing a potty into his class. They have a wobbly potty chair which his teacher thinks the kids are nervous about. I have an extra potty because it came from Tom's house. Hopefully this will help the other kids feel more comfortable too.
