Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Curry Favors

I never made it to class Thursday because I did not feel better after any amount of sleep. I got to pick up Keegan and be with him which was good as he left the next day on his first plane ride with Tom to PA. That was heart wrenching to watch him wave goodbye that morning and I can't quite tell you why I was so worried. Jeff took Friday off and amused himself by vacuuming the whole house and picking up while I was at work. I picked him up on my way to school and he went to the MFA while I was in class. We met after and he told me about some of the exhibits while we drove to the Reilly's. A nice evening of good food, blueberry beer and spirited discussion followed. I am going to be so dull when I don't have ethical questions to dump on people.
Saturday we woke up early to drop my car off to be detailed. The simple removal of goldfish crackers and layers of dust would have been enough to satisfy me but they truly made it good as new and I had forgotten how nice a leather interior can look. After brunch we stopped to talk wedding cakes at the bakery we went to on our second date. Then we hit the mall down on the border to get all manner of errands done. Damn that man and his great eye for shoes that caused me to spend twice as much as I planned because after I saw that pair nothing else would do. Saturday we went out for my friend Michelle's birthday. It was a wonderful evening out on the deck with live music and endless cheese dip. We even bumped into my cousin's boyfriend. He was out with friends because she scored tickets to the Sox game.
Today we laid low and then went to the movies. We saw "The War Tapes" which was incredible. I brought a pack of kleenex because I knew I would cry through the whole thing. I wasn't as bad as I predicted. But they are NH soldiers so it really hit home. Graphic at times but worth seeing no matter how you feel about the war. One of the things I am looking into at work is how to provide more access to health care for rural veterans.
This afternoon I read for both Mon and Tues because I want to devote tomorrow night to my homework assignment which is due Thurs. Tom returns with Keegan tomorrow evening but I won't see him until after class Tues. Jeff and I invented a curry chicken salad recipe for dinner because I got an extra whole chicken for $1.99 at Boston Market Thurs night. We're up to our earlobes in chicken. I have been spoiled by having him here four nights in a row. A taste of the future.
