Finishing this dish with lime zest and juice brightens its rich flavors.

Hot & Spicy

It is way too hot. I broke down and turned on the a/c. This house is not built for getting a breeze. I am flying out tonight for a conference in NJ. Fortunately it is at the shore so even thought I won't be able to use the beach I can at least see it. The closest airport is Philly so I will fly there, rent a car and drive two hours south. Right now I am cleaning up, packing and freshening up my pedicure.
Friday we picked up a pizza and ate on the deck which was a really good idea once the kids started on their popsicles. Saturday we all went to gymnastics and then headed down to the lake. My parents are away so we didn't go on a boat ride. But we played on the beach and I pushed Keegan around on the tube. We got them all dried off, stopped for lunch and headed home. They opted for quiet time instead of naps and then we went to the store to grab some ingredients. We made Coconut Rice with Beef Stir-Fry for dinner and used up all of the pac choi I got Wed. It was good and the kind of dish you can make as spicy as you want or not. This morning we had lemon zest waffles with creme fraiche and raspberries (cookbook). Then we went down to visit and have Father's Day brunch with Erika, Sammy and Jay. Jeff headed home from there and I took Keegan to Tom's. I stayed for a short visit with his parents and watched Tom open his gifts and card. They made the cutest things at daycare and I had found an "I love daddy" frame a few months ago. Keegan gave me a kiss goodbye and quickly returned to all the fun trucks and cranes his grandparents had brought.
