Finishing this dish with lime zest and juice brightens its rich flavors.

We're Back

Actually we returned late Thurs night and I have had my hands full since then. Master Keegan is running a fever and so far thankfully nothing else has come of it. But it means lots of extra cuddling in between getting settled back home. Jeff went home Friday morning and we had decided a while ago to just spend the weekend with each of our kids to get in some extra special time. So that was probably smart since it turns out both of them are fighting illnesses. Also I am watching the dogs while Tom is away. So picture two 60 pounders dragging me across the neighborhood with Keegan trailing behind shouting orders to the dogs in mimic of me. Good times.
St. Croix was awesome though. Everything I heard was true and we really had a wonderful, relaxing time. We stayed in a villa where our bedroom was steps away from a private pool and above our bed the windows opened to a view of the ocean. Not a bad way to spend your days and nights. And no matter how much time I spend with Jeff it is never enough stored up to not miss him when he is gone. It was weird to go from 24/7 with each other for five days to nothing. Ugh.
We were met at the airport on Sat by Jeff's friend Kenley. How can you not instantly like a girl who greets you with cold beer and frozen grapes? She took us over to our villa and then after we got settled took us out for local food. I had conch and butter with red beans and rice and plantain tostones. Then we went to her house for game night with her friends. We played a charades like game but left before the poker started. Good thing because it apparently went until 2am. The next day we went to a beach which is only open on weekends and soon will close for turtle breeding season. It was a skecthy road there but well worth it for the pristine scenery. Despite having lots of sunblock, later a t-shirt and still later a hat I was overdoing it for the first day in the sun. After going home to shower we met Kenley up in the rainforest at a local place to hear live music and have mamajuana which is the owner's recipe of rum, honey and ground up roots, etc. Yummy but dangerous. I stopped at one.
More later but wanted you to know we are home safe and sound.
