Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Over In A Flash

Friday I left work early to attend the Mother's Day luncheon at Keegan's school. I brought Couscous with Corn and Black Beans (see recipes). Each class performed songs and the final class which was 6 year olds acted out "Are You My Mother?" I am the big sap who had tears in my eyes through all of it. I'm sentimental like that. Friday night we took the kids out for dinner and they did well. I think the key is going early when we are able to. Saturday morning we made Citrus-Cream Cheese Pull-Apart Rolls (see recipes)which have on overnight prep variation that actually makes them reasonable to make for breakfast. After eating Keegan went to his second gymnastics class. He started on the rings and then was really into the trampoline. He was grumpy around music time which is unusual for him. We came home to Jeff and Isabelle and then I went off to my hair appointment. I usually don't do it on the weekends but I couldn't squeeze it in any other time. The salon was filled with girls getting updos for the prom. While I was gone Jeff made sock puppets with the kids, fed them lunch and put them down for naps. I came home to them asleep for another hour. That is a nice treat. I have never asked Jeff to do that before but I figure now that we are getting married we should start doing normal family things. As we were getting ready to take Keegan to Tom's, Erika called and invited us over. We scrapped our planned dinner and headed down. The Reilly's came up and we got to celebrate his birthday too. I can't believe how big Sammy has gotten. His is not only chubby but really long. And he looks at you so intensely. I also got a big ole smile.
Today Jeff and Isabelle left earlier than usual because I arranged with Tom to have Keegan back early so we could celebrate Mother's Day. I took Keegan down to my parents' house for brunch. It has been raining so hard here and for so long I had to get through two accidents and six barriers to get to their house. Their neighbor's dock is under water and my parents' dock is as close to under as I have ever seen it. The house is in no danger though. After brunch I put Keegan down for a nap but he only slept an hour, so mom and I curled up with him and we all fell asleep. She woke later but let us stay until we woke up close to 4pm. We headed home and had a late supper and now he is fast asleep clutching the baby doll my parents brought him from St. Croix. I had picked it out but didn't get a chance to go back to the plantation and buy it. My dad actually gave it to him because he left earlier today on a business trip. I will treasure the moment when my father, retired military, republican, handed his grandson a black, braided hair baby doll in a dress.
Mother's Day was nice and mellow which is good. Keegan gave me a very sweet card and a gift certificate to Target. He also spontaneously wished me a happy mother's day and told me that I am pretty. I got cards from Barb and my former MIL and FIL. I also got one from Erika which must have crossed the one I sent her in the mail. And Jeff gave me one this morning. It was a "to my wife card" with "STB" inserted before wife. He has been calling me his STBW (soon to be wife) and I have been calling him my STBH because fiance just sounds so weird for our situation. I have to tell you being called his wife is a very nice thing.
