Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Glub & Chub

Let's see, where was I?
Monday morning we went scuba diving. I was lucky enough to have parents who were instructors so I was certifed when I was 12. But I hadn't been diving in thirteen years. So I took the intro class with Jeff. We did the skills part and then got into the water to try out the equipment. I was nervous that I wouldn't get back into it right away but I was fine. Jeff did awesome and was a natural. We swam underwater over to the boat and my parents met us there. We went out and did two dives. The first one was at a site called aquarium and was filled with fish. My dad is really good at spotting things so he was good for a puffer fish and moray eel. The second dive was a taller reef and we swam along the edge as well as over it. We saw a ray being cleaned by small fish and a tiny turtle snacking on seaweed. I had felt sick before the second dive but was better once in the water and I am so glad I didn't miss it. After diving we went home to swim in the pool and rinse off and then showered and went out to dinner. It was a nice place right on the docks and they had spicy fish tacos and really amazing key lime pie. I think Jeff is hooked on diving and we are going to look into getting certified here at home.
I should tell you that we had already decided long ago that we want to get marrried on the beach in St. Croix. So this trip was a vacation and also a chance to look into some things. Tuesday we met with a wedding planner. She gave us lots of ideas and we spent the rest of the morning looking at villas and figuring out what we would like to do. More on that later as we lock in the details. That afternoon we drove over to Cane Bay and had lunch on the water. More fish tacos because I got a tip they had fresh mahi. It was a good tip. Tuesday night we went out to our planned fancy dinner. I am sucker for roast duck. The place even had air conditioning, it was so decadent. I hurt myself trying to finish the bananas foster I ordered. Where was Erika when I needed her? Fortunately Jeff came to the rescue. Wednesday we went to tour the Whim Plantation to learn more about the island's history and the rise and fall of sugar cane as well as the impact of slavery. Like many places it wasn't crowded at all. The many perks of going off season. Wednesday night we knew we had to go to one more place before leaving. Jeff had the cheeseburger and I had a plate of nachos. We also checked out a potential location for the wedding. Thursday we packed and went souvenir shopping before having lunch and heading to the airport. On the way we had a two hour layover in Puerto Rico and we knew the flight wasn't going to feed us so we got pizza. How very american of us. Speaking of which it was interesting to vacation in a place that felt very third world country but is actually the US and they drive on the left side of the road. I left the driving to Jeff. I probably forgot some things but I will add them later if I did. Despite the fact that we ate like kings I manage to not gain any weight. Truly an excellent vacation.
