Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

April Showers

So back to the weekend. We headed to NY to see Jeff's mom on Friday evening. The kids were asleep and we had to wake them and then put them back down but it went surprisingly well. The next day we had planned outdoor activities but it rained all day. So we settled for a ride on the mall carousel and letting them walk off energy at the mall. We ended up at a pet store and the kids basically got to look at animals without paying admission to anything. Keegan would have watched the fish tanks all day I think. He gets that from my side, the love of marine life. He likes a puppy or kitty but he goes bonkers for fish. We were going to get lunch out but they were both at the melting point so we headed back. I laid down with Keegan to get him to nap and ended up falling asleep myself. I slept for two hours. It was wonderful. We left early the next day because I needed to get back to NH. It was a nice mellow visit and I think Jeff's mom really enjoyed the kids.
On Sunday I was meeting a friend at my parent's to pickup my hive. She and her husband have an apiary and they are going to let me setup at their place. We ordered bees back in December and they are scheduled to be delivered the last week this month. They are Buckfast honeybees from a place in Texas. I am excited to get back into it after taking the year off. I think they are going to try and extract honey left by my previous bees. It would be my first taste. I need to get over to the apiary in the next couple of weeks to re-paint the hive bodies and replace some frames I had to get rid of due to damage.
Driving around and doing errands yesterday also gave me time to catchup on phone calls. I had a nice long talk with my little brother. He told me he wasn't surprised to hear about Harvard because "you're smart and you work hard." When did we become grown ups? He works for the "evil empire" as I refer to it. He was very excited about their new explorer product. He was so instrumental in the development that his name is on it! I would show you a screenshot but my MT is being temperamental with uploading pics.

Tonight's Keegan cuteness:
