Sugar Coated

- Selfish Mom's last night was great. I had missed last month because of having strep throat. Two of the women who had babies last month were there and telling tales of surviving an infant and a toddler. One of the other women is due on Sun. I made Toffee Dip with Apples (see below) and it was addictive. I am glad I made a double batch so I have leftovers. They were all excited to hear how easy it was to make. I have a feeling that it will be being served all over the state in the next few months.
- I went to a conference earlier today and met a person I needed to meet for the past 6 months. This person has been very inaccessible. So it turns out he is as big of an asshole as I guessed he would be. One of those people who only expends energy on you if there is political or financial gain. So I sat through his presentation delighting in the fact that "initiative" was spelled wrong on the header of every slide. Tee hee.
- My mom was coming to babysit tonight so I could go get the taxes done with Tom. But I never received a w-2 from my employer so I had to order another copy and reschedule the appointment. She is going to come up anyway and have dinner with us and maybe she'll stay and watch the AI results with me.
- We have germination in one of the greenhouses! I have fresh cut daffodils blooming on the table and the purple hyacinth I am force blooming is completely open. The paperwhites here in my cube are shooting up too. Spring just in time to counter the snow falling outside.

Toffee Dip with Apples

3/4 cup packed brown sugar
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 (8-ounce) block 1/3-less-fat cream cheese, softened
3/4 cup toffee bits (such as Skor) (about 4 ounces)
1 cup pineapple juice
6 Red Delicious apples, each cored and cut into 8 wedges
6 Granny Smith apples, each cored and cut into 8 wedges

Combine first 4 ingredients in a bowl; beat at medium speed of a mixer until smooth. Add toffee bits, and mix well. Cover and chill.
Combine juice and apples in a bowl; toss well. Drain apples; serve with dip.
Yield: 2 cups (serving size: 1 tablespoon dip and 3 apple wedges)

Oh my gosh that sounds amazing... especially the Skorr part. Mmm. I love me some toffee. That sucks that the guy turned out to be an ass. hate when that happens!
