Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Less Crowded

I have forty-one things to do on my holiday tasklist, I had nineteen of them slotted to do last night because I really need to take advantage of the times when Keegan is at his dad's. I completed twelve of them and changed my mind about doing two of them. Not bad really. I hit Home D*pot, the mall, Miche*l's Crafts, Best B*y and Targ*t in three and a half hours, including eating dinner in the food court. Unfortunately it meant unpacking a stuffed car in 10 degree windchill. But I feel better about getting ready for the holidays. The night before I did 85% of my shopping online so that took some stress off too. Now I sit back and wait for the packages to arrive. My mirror and wall vases were delivered yesterday but I didn't have the time to open them up yet. The only gifts left are those that need several steps or assembly and those that I like to leave for last. Do you do that? Save some things to do right before Christmas to prolong the anticipation of gift giving?
