Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

It Was the Best of Times...

The worst thing about packing:
Realizing how much stuff you have. Why do I have so much stuff? I'm hauling it all to the new place but then I'm selling it.

The best thing about packing:
Not having to clean the house. Not even wanting to clean the house. This place looks the worst it has since the first few weeks after Keegan was born.

The I'm not sure yet if it's the best or worst thing about packing:
My latest moving plan. It involves neon index cards, lists and a color coding system. It will either go really well or really badly.

You are bringing back memories of our move. Torturous. Luckily I had some help or I would have gone nuts. We did it right after the Thanksgiving holiday and me during parent conferences. I am so traumatized by it that there are still a few boxes in the basement and we moved 12/03. LOL
