Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Catching Up

So much to report.
Keegan was diagnosed with his 6th ear infection on Fri. Fortunately I could kind of tell it was coming and I premade an appt. for that night. So he is plowing his way through more antibiotics. I have a referral to an ENT so we are going to have that talk about getting tubes put in. Poor little guy.
Sat. I went to another Body Shop home party. Mostly I went to hang out with some of the ladies from my mom's group. I haven't seen them since before the holidays so it was nice to catch up.
Sun. we had Keegan's portraits done and they turned out super cute. I will post one but our home network was down all weekend so I just got access back. He was cranky during the photo shoot but they managed to coax smiles out of him. We loved them all so we bought the disk with all of the poses.
Mon. Keegan and I had the day off. We had lunch at my parents' company and they showed him off to all of their co-workers. Then we went to see Erika and Jay who we hadn't seen since Thanksgiving. Serious withdrawal on both sides. All their home improvement projects look great!
Oh and happy anniversary to them today!!
Yesterday I drove three hours to a meeting. That was three hours EACH WAY. So I basically spent the day in my car. Which I actually didn't mind because even though it was brutally cold, it was sunny and clear. If I was smart I would have gotten a book on tape. But I enjoyed the mountain scenery and listened to NPR. Boy that NPR is so interesting. I learned stuff and everything. For example, it was minus 54 degrees in MN the other day and when it is that cold you can throw a cup of water in the air, and it will come down as ice crystals. That's kind of cool.

That about covers it.
