Finishing this dish with lime zest and juice brightens its rich flavors.

The Keystone State

So I've been kind of short on words lately. I have been running around getting ready to go away through Labor Day. We are leaving in an hour or so to Pennsylvania and Tom's parents' house. We should be arriving sometime around 2am. Ugh. I am looking forward to hanging out and being spoiled. We usually go to Hershey Park but it is no fun if I can't go on any rides. Tom was willing to go and let me watch him have fun. What a guy.
I will also be there in time for the Shippensburg Corn festival. It's only the event of the season. If you like crafts, real kettle corn and those homemade Dutch soft pretzels. Usually I go crazy and buy a ton of stuff. This year being unemployed might slow me down. I'm going to focus on finding Christmas gifts for everyone else. This is good news for my in-laws, SIL Barb and her girlfriend Loretta. They inevitably end up carrying most of the heavy stuff. Take a break this year guys, but I can't make any promises for next year.
So I've gotta go finish packing the car. But unlike many of our vacations, this time I'll have internet access. So don't be surprised to see me pop up back here and also be reading all of your blogs too!
