Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Yield 6 servings (serving size: about 3 ounces ribs, 2/3 cup rice, and about 2 1/2 tablespoons sauce)

Over The Hill

Jess got me thinking about life schedules. Oh believe me I had one too.

College=Meet Mr. Right
23=Get engaged
24=Marry Mr. Right
26=Have 1st child
28=Have 2nd child
30=Have perfect life with perfect family and successful career

Needless to say that is not the way it went down. More like:

Graduate College=No job, took what I could get
22=Meet Mr. Right but in denial about it
22.5=Fall in love with “The Demon Spawn of Satan”
22.75=Recover and agree to date Mr. Right
23=Fall in love with Mr. Right
24=Move in with Mr. Right
25=Get engaged to Mr. Right even though he tortured me by having the ring for two months before he proposed
26=Mr. Right & I quit our jobs and move the wilds of New Hampshire
27=Marry Mr. Right
28=Discover what I am meant to do with my life and go to Grad school
29=Begin trying to conceive baby
30=Graduate with my Master’s and get dream job
31=Find out there is no way we are having baby without advanced medical techniques
31.25=Get laid off from job
31.5=Pregnant with lucky assisted reproductive technology baby
Rest of Life=No idea

It’s better this way. Through many personal trials I have learned that I am right here in this place at this time for reasons still unknown to me. But it’s better this way. Maybe next week or next month I will find the answer. Right now I am filled with a sense of well-being and hope

plans are no fun. That's not what life is about.

And mine still hasn't given me the ring. What's it been...6 months already? ;) (okay, maybe only 2!)

RIGHT ON!! Plans/schedules are ridiculous - what's that quote about life is what happens while you're busy planning it or something like that? Life never ends up looking the way you thought it would, which is a good thing, I think!

I love you plan-map! I made my own, go see what I'm talking about. I might not be married (or engaged for that matter) but we've been dating for 5 years. I moved 3 different times with the guy. It's time to shit or get off the pot. Clock is ticking here. I wish I could plan on starting family at 29 or 30, but the way things are going, that just won't happen.

I know that sometimes guys are a little slow to get moving, but come one, he's almost 31! oops.. p.s. How do those ping-thingy's work?

I know that my lifeplan didn't work out the way I planned either, but I wouldn't change it for anything in the world!

Congratulations on your pregnancy, I just found you today!

yeah, i am definitely beginning to realize the john lennon had it right when he said, "life is what happens when you're making other plans."
