Pucker Up

My life seems to come in waves lately. Busy time and then a lull, busy, lull, etc. These past two days I have been running around plus trying to get some extra sleep. I just spent the last two hours making Citrus Couscous Salad. I had no idea it was so involved. Well a lot of chopping really. Nevermind that I quadrupled the recipe so I would have enough for tonight and this weekend. Tonight is my Cooking Light club and the theme is lemons or oranges. Kind of an Iron Chef challenge. The menu as it stands:

Crab Dip w/Lemon
Lemon Garlic Chicken Thighs & Breasts
Citrus Couscous Salad
Lebanese Layered Salad
Snow Peas with Lemon Herb Butter
Lynchburg Lemonade
Luscious Lemon Roll
Lemon Bars

Maybe I better bring my big box of Tums with me.

Tomorrow we leave for New Jersey and the annual family reunion. My mom's side has been doing this for as long as I can remember. It's actually on Sunday but we like to be there a day early and visit with certain cousins. The picnic on Sun. is potluck except for the meat (ie. hot dogs, hamburgers, chicken, sausages). So since I need to stop taking advantage of my mom I am bringing the other 3/4's of the couscous salad. When I get back tonight I need to make Orange-Avocado Salsa for Sat. evening. Anyone wanna come help me cut up jalapenos and red onions? By this point I am actually looking forward to the six hour drive so I can sit still.
And finally I can answer everyone's "When are you having a baby?" questions.
