Had this month's Cooking Light club meeting last night. We did a "Best Of" theme choosing recipes from all the dinners these past two years. Everything was so yummy! I am definitely not that into meat any more. The pork tenderloin smothered in leek sauce was good. But my heart was really with the salads. One was mixed greens w/ pears, grapes and candied pecans. The other was cold cous cous w/ red peppers & pine nuts tossed with a canberry vinegar dressing. I swear I could just sit down and eat a bowl full. I am still not loving sweets right now either. So I had a three chocolate covered strawberries and a sliver of black bottom banana pie. Some crazy burst of energy kept me there until 11pm. But I paid for it this morning.

Finishing this dish with lime zest and juice brightens its rich flavors.
