Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Yield 6 servings (serving size: about 3 ounces ribs, 2/3 cup rice, and about 2 1/2 tablespoons sauce)

100 Things

In celebration of this my 100th entry I present to you my:

100 Things

1. Born in Fort Knox, Kentucky (figured I’d start from the beginning.)
2. Attended eight different schools K thru 12.
3. Two older brothers, one 14 months & one five yrs older.
4. Never broken a bone (knock on wood).
5. No tattoos or body piercings.
6. Never done drugs (no, really).
7. Created a fake sorority in college specifically to play pranks on other people.
8. Put presidency of aforementioned sorority on my first resume out of college (no one ever questioned it).
9. First stitches when I went downstairs in a box painted like a police car, I didn’t make it all the way.
10. Arrested in 10th grade on possession of alcohol charges.

11. Ran for 8th grade Class President after one week at a new school (I lost).
12. Certified SCUBA diver at age 11.
13. Had my picture in Newsweek while protesting on the steps of the Supreme Court.
14. Was considered shy as a child, no one believes me now.
15. Once laughed so hard I shot grape soda out of my nose and all over my friends.
16. Sang with a Christian rock group when I was 8 yrs. called “The King’s Kids” (can’t sing a note now).
17. Played the Iris in “Alice in Wonderland” school play.
18. In college my friends & I kept lists of all the guys we kissed with checkmarks next to the repeats.
19. We wore t-shirts with letters of sorority mentioned in #7 and conducted rush with pledges.
20. Been to Mardi Gras 5 yrs in a row.
21. Earned my beads the right way (wink, wink).
22. Attended 3 different colleges and took 5 years to get degree.
23. Interned at the National Organization for Women in 12th grade.
24. Dated my high school boyfriend for 5 ½ years and then broke up with him a month after graduating from college.
25. He was a racecar driver.
26. I spent most of our relationship at illegal street races, legal drag strips or car shows.
27. I can still identify tire marks left by any 1970s Camaro (scary).
28. My fingernails curl up and are freakishly white.
29. Have my Bachelor’s in Political Science.
30. Met my husband at work and did the flirty friend thing for 8 months before I’d go out w/ him.
31. He changed my life.
32. I love grape everything (candy, soda, juice, etc.)
33. Without my contacts I am incredibly near-sighted.
34. Was a high school cheerleader and my mother thought she had failed as a parent.
35. Once messed up with self-tanning lotion and wore an ace bandage to cover the stains on my hand.
36. First pet was a black goldfish named “Darthy Vader”.
37. Belong to a Cooking Light supper club.
38. I love green apples.
39. Favorite fair food is corndogs.
40. Close second is kettle korn.
41. Was considering joining the CIA.
42. Have a thing for men in uniform (especially cops & anyone military).
43. Want to learn to keep bees.
44. Trying my hand at organic gardening this spring.
45. Jumped on stage once and sang backup with a blues band.
46. Once drove to Texas to smoke a cigarette because I don’t believe in smoking and figured that way it wouldn’t count.
47. Believe in animal spirit guides.
48. Love to go antique shopping.
49. Returned to writing poetry a year ago.
50. Would never want to be famous, just recognized for professional work.
51. Love white water rafting.
52. Dream house is either a log home or old New England farmhouse with attached barn.
53. Crowd surfed and danced in the mosh pit during a daylong concert.
54. Have been skiing since I was in the 3rd grade.
55. Have my Master’s in Community & Social Psychology.
56. Some day I want to run for public office.
57. My dream is to run my own outdoor business with log cabins and sports outfitting.
58. My mom and I are really close friends.
59. Have always loved to read (mysteries, thrillers, spy novels, outdoor adventure, Native American, decent romance and girly books).
60. Joined the girl scouts in 7th grade just for the trip to Switzerland.
61. Jumped off a waterfall because my dad didn’t believe I’d do it.
62. Went 5 days without bathing while camping in Kenya.
63. Desperately want to go to Tibet/Nepal in the next five years.
64. Think I want a Master’s in Public Policy.
65. Just stopped going to therapy after a year.
66. Think everyone should go to therapy.
67. Still sleep with the teddy bear I got when I was 16.
68. Fascinated by Amish people.
69. When I was young I believed in ESP.
70. If I could have a superpower it would be mental telepathy.
71. First poet I loved was ee cummings.
72. Next I discovered Anne Sexton.
73. Want to go to all seven continents (3 more to go).
74. If we adopted I would want a Cambodian baby.
75. Love ethnic cuisine, Indian, African/Ethiopian, Asian, and Spanish.
76. It’s terribly important to me that people find me funny.
77. Registered with the National Bone Marrow Donor network.
78. I hope some day they call.
79. Won my brother’s JROTC target shoot in the 9th grade (first time I ever fired a rifle).
80. Would never want a gun in my house.
81. Truly believe people are put here to make other lives better.
82. Once camped on an island with a dead deer carcass that I insisted Tom only refer to as “the fuzzy rock.”
83. Really wish I had the guts to dye my hair red.
84. If I had a flat stomach I’d get my navel pierced in a heartbeat.
85. Want to learn to sail.
86. Threw up during our honeymoon on a Glacier cruise and forgot to move my hand out of the way.
87. Was a junior EMT until I found out to be certified I’d have to watch an autopsy.
88. Love all kinds of music from opera to country to hip-hop to alternative rock.
89. First concert was to see Heart (back when they were both skinny).
90. Once got trapped inside the gates of a cooking school in France and had to climb over the fence. My friend peed her pants from laughing so hard.
91. Wish I could sing or paint.
92. Took guitar lessons in college but ended up dating my teacher instead (he was a senior).
93. Love watching television.
94. Feel it is “my calling” to work in human services.
95. My brother’s nickname for me is Weeser, my dad and a select group of friends call me Weasel.
96. Think I will spend my whole life searching for a time when I feel at peace.
97. I am completely open to Eastern religions and would love to combine Hinduism, Buddism and Asian philosophy to help me with #96.
98. Want children so I can create caring and giving citizens of earth.
99. Know that sometimes I am naïve and idealistic.
100. Can’t believe I finally finished.

I have this theory that military brats (I included) have a huge thing for men in uniforms. Especially miltary. Rawwr.

I found you through Eka's blog...I have a 16 month old son (first baby)...we have many a thing in common...I think that's great!
