Curried Beef Short Ribs

Note: I found this was more realistically four servings.

Finishing this dish with lime zest and juice brightens its rich flavors.

Amost Perfect

I have had such an AWESOME weekend. The weather has been unseasonably warm, which for New England is really saying something. Okay the only way it could have been better was if I could have seen Erika. But you know how young couples in love are...just can't pry 'em away from eachother. Atleast I get to see her tomorrow at Yoga.

Yesterday we picked up a friend, Dirk and fought our way through the crowds at Home Depot. He helped us install two ceiling fans without electrocuting ouerselves. It is good to have friends who have contracting experience. They came out great and Tom is so excited. (It's the little things that really get him.)

Dirk stayed for dinner and of course all I had was Mac & Cheese and hotdogs. He was sweet enough to insist it was his favorite childhood meal. Then we watched the Fast & the Furious on DVD and took him back home.

This morning we got up and had breakfast with my parents at Nick's. Yum... strawberry waffles with whip cream. We also went to BJ's and hit the motherload. We left with a home theater system, super cheap phone cards, Spiderman DVD and a three pack of Oregon Chai Tea. (I am drinking the tea now, I'll have you know.)

I spent the rest of the day spackling and taping off the trim in the living room amd bathroom. I can't wait to start painting tomorrow. Then Tom's parents called and asked if they could come up and help us paint. Are you kidding? Hell ya!

So they will be here on Wed to do both guest rooms. I am so psyched about the concept of being able to finish unpacking and get settled before the end of the month. (I secretly believed we would be living with boxes for the next 5 years.) This evening Tom & I curled up under a blanket together and watched Spiderman.

Best of all I have one more day because tomorrow is a holiday!!
